Koren's Handbook of Environmental Health and Safety is arranged into two sections and 18 chapters (698 pages) to facilitate use as a text in sequential courses of instruction. Emphasis in the text is on the evaluation and control of commonly encountered problems in sanitation, including provision of safe food, adequate water and satisfactory housing, as well as maintenance of acceptable air and water quality.
